Agave nectar is the latest trend in natural sweeteners. Derived from the agave plant—the same cactus-like plant used to make tequila—agave nectar is sweeter than honey but, thanks to its low glycemic index, it does not cause sharp spikes in blood sugar levels. Its advantage is that a small amount provides the desired sweetness, whereas with sugar, you would need three times as much.
